My Journey Through Le Cordon Bleu

My Journey through Le Cordon Bleu

I wanted to share my pictures of my school because it was a journey going through Le Cordon Bleu. I lost my mom in the middle of my second year.  I did not have the strength to finish school but I managed to complete my studies. I set a goal and I made up my mind that I will do this for myself and my mother because of everything that she taught me. One thing about having a passion is when your life is hit with a tragedy, everything that is raging inside brings out the best in you. Everyone has a hidden talent no matter what type of situation you're in. I encourage you to make your hobby into your dream job. I started collecting pastry tools on down to pans and I would practice my culinary techniques everyday before and after school.

I can remember confessing one day to the head chef where I worked in a bakery long long ago. This was before culinary school.  I told him that I made a mistake with the Danish dough recipe. He whispered to me that a chef never makes mistakes but if you ever do- always go back and fix the mistake. Sometimes in life we can never change things that happen, but we can always learn from the mistakes to become stronger for the next challenge that comes our way. Just like this journey in life; there will be mistakes impossible to do over. Believe in yourself when others stop believing in you. One chef told me only the elite finishes last. That person is you.
