Okra Stew with Plantain
I have always had a love for Nigerian cuisines since visiting Africa so many years back. Last week I stumbled upon a African food mart, called Southwest Farmers Market. I went in thinking it was just a regular store but after looking around; the store turned out to be an African market. I am so excited to share with you some of the items on my list. So if you're in the neighborhood and you're planning to cook a Nigerian dish; this is the place to check out for fresh vegetables like okra, red bell pepper and ravishing red tomatoes. They have so many other African ingredients and the prices are reasonable.
You know the funny thing about okra is that during my childhood years, I had no interest in looking at okra let alone swallowing it because of the slimy texture. But as of now, I can not get enough of the flavorful taste of okra sauteed together with sweet onions and tomatoes. To make the cuisine even better I love to saute a few ripe plantains in unsalted butter, and finish with a sprinkle of some Morena pure can sugar to bring out the flavor. Recipe Okra Stew
Ingredients:
3 cups okra
2 tomatoes
1 onion
1 large plantain
2 tps of DeRica tomato paste
2 tps of palm oil for red coloring
1/2 seasoning Nigerian cube
4 tbsp olive oil/ unsalted butter as needed
Notes: Wash and slice okra set aside. Saute onions and tomatoes. Mix De Rica tomato paste with palm oil then add to the pan. Add okra to stew and simmer for a few minutes until the okra is slightly soft. Add liquid to make sauce simmer. Add plantain to olive oil or unsalted butter and saute both sides until light brown.
Green tip:
Save a few okra seeds to start a garden later on with your family, I will do the same with my sister Tracy just for fun. Enjoy!
