Last week I stumbled upon a African food mart, called Southwest Farmers Market.  I went in thinking it was just a regular store but after looking around; the store turned out to be an African market. So if you're in the neighborhood and you're planning to cook a Nigerian dish; this is the place to check out for fresh vegetables like okra, red bell pepper and ravishing red tomatoes.  They have so many other African ingredients and the prices are reasonable.   You know the funny thing about okra is that during my childhood years, I had no interest in looking at okra let alone swallowing it because of the slimy texture. Curry Fish Stew Topped With Eggs One of my favorite Youtube chefs inspired me to make this dish.  First after boiling the eggs you lightly fry the eggs in curry or with your favorite spices. Then add the eggs into the fish stew to enjoy over rice. I prefer leaving the eggs as a side dish. Eggs bring out any type of recipes. I wanted to use several tomatoes to make a thick stew to hold the fish together. One of the things I enjoy about testing recipes is that you can alternate the ingredients with something different to call it your own.

I watched several You-tubers whip together the ingredients, yet they disclosed the part of shelling the peas. Yes-it looks so easy on YouTube but, do not be fooled. It takes blood, sweat, and tears to make this tasty dish. This brings back memories of shelling peas until my hands turned purple with pain. With trial and error of preparing this meal; I must say it turned out very nice and deliciously well in the end.
